Chic Pea Orzo
Ingredients:
- 16 oz Orzo
- 2 cans chic peas, drained and rinsed
- 4 cups unsalted chicken broth
- 3 Tbsp olive oil
- 5 garlic cloves, diced
- 1 shallot, diced
- 1/4 cup cilantro
- 1 Tbsp Italian Dressing
- 1 15 oz can diced tomatoes, do not drain
- 2 tsp black pepper
- 1 tsp sea salt
Directions:
- Coat the bottom of a skillet with olive oil.
- Saute garlic and shallots until soft (don’t overcook).
- Add orzo, chic peas, chicken broth and spices except cilantro and bring to a boil.
- Cover and cook on medium-low heat for 10 minutes, or until orzo is al dente, stirring frequently to ensure nothing is sticking to the bottom.
- When ready to serve, stir in fresh cilantro.
