Chic Pea Orzo

Chic Pea Orzo

Ingredients:

  • 16 oz Orzo 
  • 2 cans chic peas, drained and rinsed
  • 4 cups unsalted chicken broth
  • 3 Tbsp olive oil
  • 5 garlic cloves, diced
  • 1 shallot, diced
  • 1/4 cup cilantro
  • 1 Tbsp Italian Dressing
  • 1 15 oz can diced tomatoes, do not drain
  • 2 tsp black pepper
  • 1 tsp sea salt

Directions:

  1. Coat the bottom of a skillet with olive oil.
  2. Saute garlic and shallots until soft (don’t overcook).
  3. Add orzo, chic peas, chicken broth and spices except cilantro and bring to a boil.
  4. Cover and cook on medium-low heat for 10 minutes, or until orzo is al dente, stirring frequently to ensure nothing is sticking to the bottom.
  5. When ready to serve, stir in fresh cilantro.
