3 Tbsp taco seasoning – How to make taco seasoning: 1/4 cup chili powder, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp cayenne powder, 1 tsp dried oregano, 2 tsp paprika, 3 Tbsp ground cumin, 2 tsp black pepper. Store leftovers in a small jar.

Directions
In a saucepan, cover dried lentils with water and bring to a boil. Cover, reduce heat to low and simmer for 25 minutes until lentils are tender. (I cooked my lentils in the Instant Pot ahead of time). Remove lentils from pot, drain and rinse. Set aside. If you use canned lentils, just drain, rinse and proceed to the next step.
In a large skillet or saucepan, heat oil over medium heat. Add the onion and sauté for 5 minutes until soft and translucent. Add in the reserved lentils, vegetable broth, taco seasoning and salsa.
Mix well, slightly mashing with a potato masher or fork.
Cook soft or hard taco’s according to the package directions. (I prefer the hard taco’s)
Assemble tacos: Add a few pieces of lettuce to the center of each tortilla. Add a little less than 1/3 cup of lentil filling on top. Top with your choice of fresh guacamole, salsa ,and chopped cilantro.
